We had lazy ready meals last night (Malay chicken and little prawn spring rolls Lick).

I think we're doing actual cooking tonight, although I am not sure what we are having (Mr Neener does most of the meal planning and I help cook it!).

Truly epic sandwich for lunch today...

    "Predictive Mex
Mexican pulled beef accompanied by our homemade jalapeno pepper slaw of cabbage, red pepper, onion, cumin and a twist of lime finished with chipotle mayo"

On a bloody massive brown baguette. Lovely.

It was! Lovely and spicy! It's a little local sandwich shop and they have a few 'specials' witch they change every couple of months. They are all to die for!

Tonight we had salmon baked in a honey, soy and five spice marinade with veg and fried rice - was lovely considering I didn't follow any recipes.

Tomorrow we are having pork loin medallions casseroled in a veg and tomato sauce which I cooked tonight to let the flavours develop overnight. It is quite tasty already smile

    Mmmm, that sounds lovely!

We're having salmon this week, which will be rubbed with an M&S soy and ginger marinade and baked on a bed of vegetables (also coated in the marinade) I am looking forward to it. Lick

It's sort of healthier chicken nuggets/goujons. You get chicken breast pieces, dip them in beaten egg then roll in a mixture of crumbled Weetabix and a secret blend of herbs and spices (basically whatever dried herbs and spices are to hand) and bung them in the oven.
